Dit is een recept met een verhaal, de moeite waard ook al zie je niet veel in hummus (spreek uit: ischgoemoes). Ik dacht dat hummus een smakeloos, veganistisch zangzaad papje was. Gelukkig wordt het niet van zangzaad gemaakt en met kipsaté is het veganistisch noch smakeloos...
Inleiding
De noten/olijven handelaar op de haagse markt waar ik normaal gesproken noten/olijven haal gaat met vakantie en verkoopt daarom zijn kraam leeg. Afgelopen zaterdag splitste hij mij een half pond kikkererwten in mijn maag. Thuisgekomen heb ik ze eerst proberen weg te werken als hartige snack bij de prolevisie, maar dat was niet echt lekker. Omdat ik ze wel behoorlijk nootachtig vond smaken en omda ze veel minder vet zijn, kreeg ik het idee om de pindasaus mee te maken. Pindasaus = goed, maar ik maak dit niet zo vaak omdat het niet geheel weighhtwatcher verantwoord is. Na een korte zoektocht op internet bleek dat puree van kikkererwten beter bekend staat als hummus...
Omdat ik nu al zo ver gevorderd was in het denkproces heb ik mijn reserves maar opzij gezet en het volgende, op tafel gezet (voor 3 personen):
Ingrediënten
75 gram gedroogde kikkererwten
1 eetlepel komijn
1 eetlepel sesamzaad
250 ml melk
1 verse groene peper
2 lenteuitjes
rode puntpaprika (oid)
1/2 limoen
voor de saté:
500 gr kipfilet
2 eetlepels ras el hanout
1/2 limoen
2 tenen knoflook
olie
Bereiding
Snij de kipfilet in stukje zo groot als je ze op de saté wil
Voeg ras el hanout, sap van 1/2 limoen, geperste tenen knoflook en de olie toe
Meng alles goed door elkaar en laat afgedekt in de koelkast staan.
Week de satestokjes in water.
Met een blender, vergruis de erwten de sesam en de komijn (ruikt lekker!)
Hak de paprika, lenteuitjes en de peper zeer fijn
Verwarm wat olie in een pannetje en bak de groente.
Voeg melk toe + het 'meel' van de ertwen, sesam & komijn.
Blijf water toevoegen totdat het een vloeibaar genoeg is en warm goed door.
Voeg de limoen toe en breng op smaak met zout (flink wat) en peper.
Maak de saté terwijl de saus pruttelt.
Grill de sate op de BBQ of in de grillpan
Als ze gaar is zet de stokjes ondersteboven in de hummus satésaus.
Serveren
In de overgebleven marinade kan je nog even snel wat champignons op hoog vuur bakken, serveer verder met een beetje rijst + gehakte lenteui.
Tot slot
Hummus wordt traditioneel los gegeten met pita broodjes, ik vindt dat persoonlijk dat een beetje saai, de frisse marokaanse saté erbij is precies wat het nodig heeft.

Antillean BBQ Sauce
I got this recipe of Jennifer from www.slexip.nl at a nice BBQ this summer. Hopefully there will be some opportunities this year to make this one ! PS slexip.nl has its own google gadget:
Ingredients
1 green paprika
1 onion
15 ml picalilly
15 ml concentrated tomatoes
(lemon juice)
Preparation
Chop the onion and the green paprika and fry them in a frying pan.
Add the concentrated tomatoes and pickles and fry shortly
Add water until the right thickness is accomplished let it simmer for a while to allow the flavours to mingle.
Finish off with salt and pepper + a few drops of lemon juice

How to grill a trout
Yesterday the weather was great, so it was BBQ time ! I got my hands on some nice salmon trouts and this is how i cooked them.
Ingredients
2 (salmon) trouts
a handfull of rosemary branches (freshly cut, the whole branch)
1 lemon
1 BBQ with a lid
Preparation
Light the BBQ, and wait until the coals are turned white.
In the meantime, clean the trouts and put them in a fish grill.
Throw them on the barbie, and wait till they're almost done. (check the inside)
Now remove the grill, throw the rosemary branches on the coals. Quickly place the grills and fishes back on and close the lid of the BBQ. Close the air holes on the coals (if any) The rosemary won't burn because there's not enough oxygen, but the fumes will give your trout a fantastic flavour. After the smoke is gone, remove the lid and your fish is cooked perfectly. (the skin's especially good)
Don't forget to eat the trout cheeks, there are delicious !

Beer can chicken
Up until now the summer in Holland was pretty useless. This weekend the forecasts look good ! I will probably do some redneck cookin' on saturday: Beer can chicken.
Ingredients:
1 whole Chicken
1 can of Beer
Olive oil
2 cloves of Garlic
Chicken rub (kipkruiden)
Instructions:
- Start with a hot grill (coals all white and ready to cook). Drink about 1/4 of that can of beer. Set it aside 3/4 full and have a couple of full ones. (gotta love this recipe !)
- Get the chicken ready for cookin'. Trim some of the fat, get rid of the giblets.
- Rub liberally with the olive oil and the chicken rub. Rub the cavity with some crushed garlic.
- Make some more holes in the top of the can and drop in the crushed garlic.
- Oil up the can and lower that chicken over top of it. The beer can goes into the chicken's body cavity and allows the bird to stand upright.
- Place a drippin' pan, place the chick with the beercan on it and cook the chicken until its wings are loose and the skin turns clear.
